Как отличить натуральный мед от подделки: 6 простых способов

Мед — это натуральный продукт, который славится своей пользой. Однако на практике даже самый качественный мед может содержать примеси и консерванты. Заметить невооруженным глазом их не получится, но есть несколько методов, которые помогут выявить подделку.

Из чего состоит мед

Мед состоит из природных сахаров: сахарозы (80%), фруктозы, глюкозы, а также воды. Продукт богат почти всеми полезными веществами, особенно витамином С и полифенолами.

Производят мед медоносные пчелы. Они собирают нектар растений и трав в период цветения, частично переваривают его, обогащают ферментами и распределяют по сотам. Затем из меда выпаривается лишняя влага, идет процесс «созревания», он начинает густеть. Получившаяся масса и есть натуральный мед.

Как подделывают мед

Натуральный мед должен соответствовать требованиям, прописанным в ГОСТе:

По внешнему виду — жидкий либо частично кристаллизованный.

Запах — выраженный, приятный, без посторонних ароматов и примесей.

Доля воды — не более 20%.

Содержание сахаров — не менее 65%.

Однако риск выбрать поддельный мед, который полностью отличается по составу от натурального, крайне низок. Часто производители хитрят еще на стадии «созревания» продукта — указывают лживые сведения на этикетках.

Какие способы подделки меда существуют:

Неверное место происхождения. Например, производители указывают ложный регион сбора и производства (чаще всего — Республику Алтай или Башкирию).

Незрелый продукт. Этот мед выкачали из сот раньше положенного срока. Его товарные характеристики уже не соответствуют стандартам качества — процент влаги превышает требуемые 20%.

Смешивание разных видов меда. Иногда в более дорогие сорта меда добавляют дешевые аналоги. Например, к липовому добавляют подсолнечный мед.

Разбавление продукта. Чтобы увеличить объем продукции, недобросовестные производители могут разбавлять мед водой, крахмалом, мукой и пр.

Искусственный мед. Он не имеет ничего общего с натуральным, так как его синтезировали. Производят его из сахарного сиропа с добавлением синтетических или пищевых красителей и ароматизаторов.

6 способов, как отличить натуральный мед от подделки

Оценить внешний вид

По консистенции мед не должен быть мутным, с осадком или расслаиваться. Категорически не допускается содержание животных остатков или иных элементов.

Аромат натуральной сладости не имеет посторонних запахов, а вкус не должен отдавать кислым или карамелью.

Проверить вязкость

Натуральный мед имеет тугую и сиропообразную консистенцию. Чтобы проверить вязкость продукта, нужно:

Взять ложку и обмакнуть ее в мед.
Поднять на небольшое расстояние от тарелки.
Качественный мед будет непрерывно стекать и образовывать горочку. Поддельный сразу же растечется по тарелке.

Растворить в воде

Натуральный мед высокого качества плохо растворяется в воде. Достаточно набрать чайную ложку меда и опустить ее в стакан с теплой водой. Сладость осядет на дно. Чтобы мед смешался с жидкостью, его нужно размешать. Вода станет мутноватой. Поддельный мед легко растворяется в воде, даже не нужно его размешивать.

Смешать с уксусом

Некоторые пчеловоды добавляют в мед мел. Он увеличивает количество продукции. Чтобы определить наличие мела, достаточно смешать ложку меда с парой капель уксуса и воды. Если смесь начнет набухать, пениться, значит, продукт фальсифицирован.

Проверить с помощью йода

Капля йода поможет определить наличие крахмала в меде. Как это сделать:

Взять стакан негазированной воды и растворить в ней каплю йода.

Добавить чайную ложку меда.

Если вода окрасится в синий цвет, значит, в сладости есть крахмал.

Проверить с помощью огня

Проверка огнем проводится для определения лишней влаги в продукте. Следует взять свечу и окунуть ее фитиль в мед, затем поджечь (если нет свечи, подойдет обычный ватный диск).

Если пламя легко разгорелось, то содержание воды нормальное. Случай, когда фитиль издает треск и не загорается, говорит о наличии лишней влаги.

Тем не менее самую точную информацию о качестве меда может дать только лабораторный тест. Обычно его результаты должны быть у продавца. Но при желании отправить мед на проверку можно самостоятельно. Как правило, стоимость такого исследования начинается от 500 рублей.

Срок проведения ветсанэкспертизы не должен превышать 10 календарных дней с момента поступления проб в лабораторию и трех часов с момента получения результатов лабораторных исследований.
